This meal which is so simple and quick to make is so good even my picky kids will eat it.
Whole cooked boneless skinless chicken breast. Cut into strips.
1 egg white for dipping chicken
Sprinkle chicken with reduced fat parmesan cheese for coating
Cook in Tbls EVOO until golden brown
Mock home fries
Cauliflower sliced, onion chopped,egg white, garlic, reduced fat parm and pepper. Mix together and cook in tbls EVOO. If you use the same pan as the chicken you can save yourself 100 calories by eliminating the second Tbls EVOO.
