Healthy Chicken Nuggets
This is one of my favorite meals. I call it healthy chicken nuggets. It’s simple and quick to make.
1 whole chicken breast boneless, skinless
Ken’s hot wing sauce or whatever kind you like, however be sure to check the sugar content
Rinse the chicken breast under cold water. Allow the water to drip completely. Cut chicken into strips and then again into bite size pieces. Put in a bowl, lightly drizzle with hot wing sauce. Stir together. Sprinkle with reduced fat (RF) parmesan cheese and stir, sprinkle once more with the (RF)Parmesan and stir one more time.
Add 1 Tbls of extra virgin olive oil so as to lightly coat the bottom of the pan. Heat oil up on med to high heat and add chicken pieces one at a time so they are all separate in the pan. Cook until golden brown. Flip over and do the other side the same. The chicken will be fully cooked in about 10 minutes.
I like to dip mine in fat-free ranch dressing. This is one delicious dish. Hope you enjoy 🙂
